Chicken with Kale & Garlic

Chicken with Kale & GarlicNow… I will admit, I am not a huge fan of Kale (who is, really?)… but when it is made with the seasonings listed here, I found it to be almost delicious!
My 13 year old son even ate it with little complaint!

Chicken with Kale & Garlic

      • 1 Bud (head) Garlic
      • 1 lb Kale
      • 1 Rotisserie Chicken
      • 1/4 lemon or 1 dash of Lemon Juice
      • 1/4 Cup Chicken Broth

    Fry Garlic in olive oil, salt, pepper, caraway seeds, and butter until light brown. Add a handful of Kale. Stir until kale is slightly wilted, then add 2nd handful. Add lemon juice.  Continue adding kale until all of the kale has been used.  Once kale has been wilted, cover and continue cooking on reduced heat until kale is tender.

    Serve with the Rotisserie chicken.

    Pairs well with white wine. 🙂
