FLOURLESS WALNUT SPONGE CAKE

Slice of Flourless Walnut Sponge Cake

FLOURLESS WALNUT SPONGE CAKE INGREDIENTS:

BATTER
6 eggs – yolks separated
1/4 cup sugar
1/8 tsp salt
1 cup fine ground walnuts
walnut flavoring (to taste)

ICING
1/4 cup icing sugar
1 tsp vanilla flavoring
1 pint whipping cream

EXTRA
8 1/2 walnuts

INSTRUCTIONS:

CAKE BODY

Separate yolks and whisk on high with sugar until pale, creamy yellow, and sugar is dissolved. Add salt, walnuts and flavoring.

Whisk egg whites until firm peaks form and fold into mixture. Immediately pour into 10 x 18 pan lined with parchment paper and bake for 15 – 20 minutes in preheated oven at 325 degrees (or until surface springs back to touch).

ICING

Mix whipping cream, slowly add icing sugar as peaks form. Add flavoring and chill in fridge.

When cake is baked, remove from pan, remove parchment, and cool. Cut in half (10 x 9) when cooled and cover base with icing. Place 2nd piece of cake on top. Finish decorating with icing (top and sides) and top with two row of 1/2 walnuts.
