Keto Friendly romaine boatsLast night, my husband was going to be making bratwurst on a bun, but because I’m doing the Keto thing, he was trying to figure our what to do for me for a bun. Earlier, I had happened to notice that the romaine lettuce leaves looked similar to buns (the bread kind lol), so I suggested using one of those to put the sausage into.

In addition to using bratwurst, he decided to experiment a little and try using bacon.  The crunchy bits of this flavorful protein combined well with the coolness of the lettuce, and the creamy cottage cheese rounded out the flavor profile. 

Add a few strawberries** as a side and you’ve got a meal that’s not only low carb but delicious as well.

As you can see from the picture, it turned out really well.  

How To Make these delicious Keto Friendly Romaine Boats

Per serving

  • 2 leaves of Romaine Lettuce
  • One bratwurst link (I prefer using Johnsonville Beer Brats – hey, I’m from Wisconsin.  Brats & Beer are a thing there)
  • 4 rounded tablespoons of cottage cheese (large curd is preferable)
  • 2 strips Thick sliced bacon
  • Strawberries (I suggest 2 cut in half)**

Using a Romaine Lettuce leaf as a base, place 2 of the scoops of cottage cheese in the center.  One one of the leaves, place a cooked or fried bratwurst, on the other one, kind of crumble up the bacon into medium sized pieces (see picture).  Place the strawberry slices on the side and serve.

** You can substitute tomato, berries, or any other juicy fruit for the strawberry, if desired.
