Mom’s Chicken Noodle Casserole
I remembered another recipe that my mom used to make. It’s very simple, yet very delicious and extremely versatile. You can add things like carrots, or celery and use whatever seasonings you want. Go ahead, make it your own! 🙂
- 1 can chicken noodle soup (I like using Campbell’s Homestyle Chicken Noodle Soup)
- 1 can Campbell’s Cream of Chicken soup
- 1/2 bag frozen peas
- 1 bag wide egg noodles (Dumpling noodles)
- 1 can chunk chicken or if you would rather, you can cook a large chicken breast (we used 3 chicken strips for this post)
- salt (to taste)
- pepper (to taste)
- Herbamare or Cavender’s seasonings (to taste)
How to make Mom’s Chicken Noodle Casserole:
Boil dumpling noodles until al dente (about 7 – 9 minutes). Drain.
Add chicken noodle soup, peas, and chicken
Add salt, pepper and seasoning to taste
Stir.
Place into pre-heated oven (350 degrees) for 1/2 hour.
Makes approximately 6 servings

You can use this as a fast and easy alternative to using chicken breast
