Papa’s Maul Tachen
(3105 calories divided by the number of Maul Tachen) makes between 60 and 65 (50 calories each)
First, Make Papa’s Perfect pasta (1325 calories)…
Saute 1/2 vidalia onion and 1 whole Garlic, both fine chopped, in a tbsp of butter or olive oil (110 calories) DO NOT CARMALIZE …low heat for 1/2 to 3/4 hr, then cool.
In a large bowl place cooled sauteed onion, garlic mix,
- 1/2 pkg Johnsonville sausage brats (2.5 brats) stripped of casing (650 calories)
- 10 oz ground beef (700 calories)
- 1 Tbsp Oregano
- 1 Tbsp fine ground fennel seeds
- 1/2 cup chopped Parsley,
- 1 tsp Pepper,
- 1/2 tsp salt
- 1 Tbsp Tarragon
- 1 Tbsp Maggi seasoning
2 Large eggs (156) and remaining 3 egg whites from making the pasta (84 calories)
Blend all ingredients let sit for a min of 1 hr for the spices to steep.
When ready to cook… put on a pot of chicken broth (2x Swansons unsalted 80 calories) and water 50/50 mix. OR use a pot of boiling water, 4 lt, and add “Knorr chicken bullion” 2 Tbsp (30 calories)
Roll out the pasta into a LARGE sheet about 1 mm thick (should be able to read a newspaper through the dough)
Spread the meat evenly across the whole pasta.
Then starting on 1 side roll the pasta until the roll is about 5 cm round (2 in) cut the roll free from the sheet and repeat with remaining pasta until all is rolled up.
Take each roll and cut into discs about 2.5 cm (1 in) thick and place the coiled discs on a tray.
When the broth is boiling place about 16 of them in the pot and give it a GENTLE stir to ensure none are stuck to the bottom… wait for them to float, cook for another 2 min, then remove them from the pot and into waiting bowls add a ladel full of broth to each and serve.
Continue adding 16 discs to the pot and removing them when ready until all are cooked (add extra water to the pot as needed to keep the liquid level up)
They can all be made ahead of time and added to a hot broth when serving but are best fresh from the pot.
