Pasta Dough: (1321 calories)

Papa's Perfect pasta flour

* Wet ingredients:

  • 2 large eggs
  • 3 large yolks
  • Water

(total of 5 eggs)

Instructions:

weigh the eggs and yolks then add enough water to get to 185 grams total

knead for 8-10 min

Rest for at least 1/2 hr

roll and cut to desired shape
