Perogies, Zucchini Fries & Chicken

When I was at Aldi’s yesterday,  I happened to notice a product that I had not seen before. It looked interesting, and although I usually avoid anything that even hints at including a food i hate, I decided to try it.

The food was eggplant.  Over the years, my husband has tried to get me to eat it by serving it in different ways, but he could never change my mind about this purple vegetable.  However, I took one look at these zucchini fries and thought – hmmm… now THIS might actually be good!

When we got home, he looked in the freezer, saw that we had perogies and chicken strips and decided that this was what was for dinner.

** NOTE:  If you can’t find zucchini fries anywhere and you still want to try this recipe, here is how you can Make your own Zucchini Fries!  

  • Take a zucchini
  • Cut it lengthwise into slices
  • Cut each strip lengthwise 
  • Repeat until you have thin strips of zucchini
  • Lightly beat one egg in a bowl
  • Add zucchini strips
  • Stir until strips are coated with the egg
  • Remove and toss into a bowl filled with bread crumbs (seasoned or plain, your choice)
  • Lay strips out on lightly oiled baking sheet and allow to air dry before putting into preheated oven.

Instructions:

(Makes Single Serving)

 Take the zucchini fries and spread 1/4 bag* on a cookie sheet.  Bake them at 350 degrees for 20 minutes.  At about the 2 minute mark,  turn the oven to ‘broil’.  This makes them brown more evenly and even gives them a slight crispy texture.  While waiting for the fries to finish (after fries have been in the oven for about 10 minutes), boil 3 or 4 perogies* (or fry them, your choice) until cooked. At the same time, fry 2 chicken tenders* (seasoned to taste) for 10 minutes.  If everything works as planned, everything should be done and ready to eat at about the same time.

Place Perogies, Zucchini Fries & Chicken on plate and serve.  Enjoy!
