Steak & Eggs with Potatoes
These steaks would make Gordon Ramsay jealous! I have eaten at the Gordon Ramsay’s Steak at the Paris Hotel in Las Vegas and the quality of these are highly comparable.
INGREDIENTS
1 bud chopped garlic
1 lg onion
1/4 stick butter
3 tbsp soy sauce
4 – 8 oz Steaks
3 – large Potatoes
4 eggs

Steak & Eggs with Potatoes
First, sauté garlic and onion in fry pan with Tarragon, basil, salt and pepper (to taste). When 1/2 done sautéing, add mushrooms (to taste). Continue to sauté until the onions are brown and schmaltzy (rendered down). Set aside.
STEAK
Sear each piece individually – first one side then the other, then the edges (to seal in the juices).
Set aside until all pieces are seared. Lower heat, then cook for approximately 2 minutes on each side (medium rare). Remove and let rest for 20 minutes.
POTATOES
Take 3 large potatoes and cut them into 1 inch cubes. Rinse in HOT water (to remove surface starch) and microwave them on HI for 10 minutes. Place in fry pan with 1 cup HOT oil and allow to brown on all sides, stirring and flipping every 2 minutes or so until the potato is cooked.
EGGS
Pan Fry in butter. Salt and Pepper to taste.
Place egg, steak, and scoop of potatoes on plate. Drizzle onion, garlic and mushroom mixture over steak. Serve with your favorite red wine.
